We're thinking of doing casseroles for Christmas day. We'll have family in and out of our house all day... So this way, we can stay out of the kitchen and have food available all day.

You could do several kinds of chicken enchaladas like a red sauce one and a green sauce one. Even Tamale Pie would be easy and cheap!! Then serve up seven layer dip, salsas, a crockpot of queso and chips!! You could do a tator tot casserole for the kids if they don't like mexican. We are doing appetizers at my house all day long as we didn't want to spend all day in the kitchen either.
If you have a crock pot I have a reciped for a Taco Soup. It's so quick and so easy. That's a good idea you have. I hate being confined to a kicthed all day especially this year since I'm already confined to my laptop all day as I'm working Christmas day.
I have a good mac and cheese recipe. Also green bean is usually a fav as our sweet potato at hubby's family. Let me know if you want me to dig out recipes for you.
